Sunday Chili

While I love to cook, sometimes I just want an easy meal that tastes great. If you're like me, you'll love this recipe for easy chili. It has a “simmered all day taste” and takes less than 30 minutes to make, perfect for a lazy Sunday!

Sunday Chili

o    1 pound ground beef or turkey
o    1 small yellow onion, chopped
o    2 cans Rotel (tomatoes and diced green chilies)
o    1 can northern white beans
o    1 can black beans, drained
o    1 can dark red kidney beans
o    1 can light red kidney beans
o    1 can chili beans
o    1 tablespoon adobe sauce (This is where the magic happens!*)


Brown the beef or turkey in a stock pot, stirring until crumbly; drain. Add the onion and mix well. Cook until the onion is tender, stirring constantly. Stir in the black beans, drained and the remaining canned ingredients undrained, add one tablespoon of adobe sauce. Cook on medium heat for 15 minutes. Yield: 8 servings

* Use the sauce from a can of chipotle in adobe. I use my immersion blender on the whole can. The resulting sauce can be stored in a glass jar in your fridge for months. Try it on everything: eggs, mixed with mayo to make an amazing chipotle mayo, added to soups for a touch of spicy without all the heat. You'll love it!
